This past weekend, we had a birthday party! A Hello Kitty-themed birthday party to be exact! 22 kiddos came over to swim and have fun. We made snacks for the parents and the children, and for some reason, the “adult table” ended up with a Mexican theme! I took a picture of the table but it has a crazy shadow in it (that might be: 1. my hand, 2. my hair, or 3. the camera strap) OOPS! Oh well, here it is in all its badly-lit glory:
My mom and I made all of the snacks – some were new recipes, some were old favorites. We had:
* Southwestern Baked Eggrolls
* Pene Moore’s Roll-ups
* Creamy Jalapeno Dip
* Jalapeno Popper Dip
* Black Bean Dip
* And chips and salsa to go with everything!
The children’s table was a bit more simple – sandwiches (PB&J, tuna salad and egg salad) all cut out in the shape of Hello Kitty, a veggie platter, lemonade, chips, goldfish, pretzels, etc.
Instead of a big Hello Kitty cake from our favorite bakery (where we have gotten every birthday cake ever), I told Miss F that I would make her cupcakes. When I asked what flavor, she immediately chose three! Yikes. So, we had strawberry, vanilla and peppermint mocha. Whoa! All were yums, but the strawberry really stole the show! This was also my first time to use a pastry bag to frost the cookies, so don’t judge too harshly at the less than perfect piping job! Piping frosting is really fun and actually might not be so hard to do when you are not an hour away from a party to start and you are still in your jammies! 🙂
And as hard as it was to do the snacks and three different kinds of cupcakes, all was worth it when the birthday girl said it was her best party ever. 🙂 Love you Bug.
