I feel so uninformed. How could I have been so oblivious??
Today is National Margarita Day! I don’t know who deemed it so, or why February 22nd was chosen as the date, but I’ll take it! Who am I to question such obviously good choices?
I was going to post this recipe on Friday as the weekly cocktail, but why wait? And really, as if I needed an excuse for more margs…
I made these in the blender as directed below, but found that the melted/melting ice diluted the flavor for me. I made them again combining all the ingredients (except ice) and served on the rocks – much more to my liking. I’ve left the recipe alone, just noting my suggestion.

Pink Grapefruit Margaritas
Yield: Four drinks
1 lime, cut in wedges, optional
Kosher salt, optional
1 cup Ruby Red grapefruit juice
1/2 cup fresh squeezed lime juice (about 4 limes)
1 cup Triple Sec (or another orange liqueur)
2 -3 cups ice
1 cup silver tequila
1. If you like a salt rim on the glasses, rub the lime around the edge of the glass and then dip the rim of each glass lightly in a plate of kosher salt. Set aside to dry.
2. Combine the grapefruit juice, lime juice, triple sec and ice in a blender and puree until smooth. Pour into a large pitcher, add the tequila and stir until combined.
Note: To serve on the rocks, blend all juices, Triple Sec and tequila in a pitcher, stir to combine and serve over ice in prepared glasses.
