The Summer heat is here. Well, ok, in reality it has actually been here for a while now…such is life in the tropics. (…and the Miami Heat are here too! Game 4 – go Heat!!)
Time to break out the summer treats! We’ve been eating watermelon for a couple of weeks now and they are just starting to get really good. I bought a particularly large one last week because I had big plans for it. Those plans involved these kid-friendly ice pops and some adult-friendly watermelon cocktails! 🙂

The ice pops are a nice combination of sweet and tart. Very tangy and perfect for a hot summer day! The Misses loved them as is, but you can certainly adjust the amount of lemonade to make it less tart and more watermelon-y.
Watermelon-Lemonade Ice Pops
2 cups (packed) finely chopped seeded watermelon
3/4 cup frozen lemonade concentrate (half of 12-ounce can), thawed
3 Tbsp. sugar
Pinch of salt
1. Combine all ingredients in bowl of a food processor and puree until very smooth.
2. Divide mixture among 8 ice pop molds (each about 1/4 to 1/3 cup capacity).
3. Cover and freeze until firm.
