This was the second part of my watermelon plan…Grown-up watermelon fun! Made these for D and I and they are good. And quietly potent! 🙂
The recipe says to add ice to make 5 cups, but I would add in batches until you reach the desired taste and consistency. Mine got too thick and a little too watered down tasting (and we do not want that!). D said they needed sweetener so he added maraschino cherry juice to his (online, someone said they added grenadine syrup, which is the same thing right?), but I liked the not-so-sweet, limey, watermelony flavor. Try it and see how you like it!
Not a great pic. It was hot. I was thirsty.
Yield: +/- 5 cups
4 cups peeled, seeded, cubed watermelon
1/2 cup light rum
1/4 cup fresh lime juice (about 2 large limes)
1/4 cup orange-flavored liqueur (triple sec)
1. Freeze watermelon in a shallow pan for at least 6 hours.
2. Combine frozen watermelon, rum, lime juice, and liqueur in the container of an electric blender; process until smooth, stopping once to scrape down sides.
3. Add enough ice to bring mixture to 5-cup level; process until smooth. Repeat procedure, if necessary, until mixture measures 5 cups.
