It is finally Friday and I need a cocktail. Not want. NEED.
I’ve had a very trying and challenging couple of weeks. Nothing that I really want to write about, but lots of things swirling around me.
Let’s just say that I’m ready for a nice drinky-poo at the end of this week!
This was a really nicely sweet and subtle drink. The basil is just noticeable and adds a nice herby element to the sweet strawberry and simple syrup combo. I am still able to find nice fresh strawberries down here in hell South Florida, but if you can’t save this one for Spring! 🙂 So delicious.

Strawberry-Basil Rumtini
Yield: One tasty drink
4 strawberries, hulled and quartered
3 large fresh basil leaves, coarsely chopped
3 oz. white rum
1 1/2 oz. freshly squeezed lime juice
1 oz. simple syrup (FYI – Just equal parts sugar and water dissolved together in a saucepan over medium heat. Once dissolved, remove from heat and let cool. Store in the refrigerator and use as needed.)
Ice to fill shaker
1. Place strawberries into cocktail shaker and mash/muddle to a puree.
2. Add basil leaves to shaker and mash/muddle into strawberry puree.
3. Add rum, lime juice and simple syrup to shaker; add enough ice to fill.
4. Cover shaker with lid and shake for 15-30 seconds. Allow to rest for another 10 seconds and strain into martini glass.
