Knowing that I was pesto hater for most of my life, the fact that I tried this recipe in 2002 and immediately declared it “Fantastic!” says a lot about this dip. I have made this so many times and every time, it is really well received.
Not only is it incredibly easy to put together – 4 ingredients! – but it is delicious and a nice change of pace from ranch or blue cheese dips with a vegetable tray. I’ve not tried it with low-fat cream cheese or sour cream, but I think those would work just fine.
Creamy Pesto Dipping Sauce
Yield: 2 cups
4 oz. cream cheese, softened
1/2 cup sour cream
2 Tbsp. grated Parmesan cheese
1. Place all of the ingredients in the bowl of a food processor or into a blender and cover.
2. Process until smooth and creamy.
3. Serve with an assortment of fresh vegetables and/or cooked shrimp.
