It seems I haven’t posted a Friday Cocktail since April. Wait, what? Time to remedy that sad situation! (Lest you think that I have jumped onto a wagon of some sort, rest assured that the California wine industry is chugging along quite nicely thanks to me…)
Now that summer is in high gear (And on its way to winding down – the Misses start school in 18 days!!), let’s liquor up some perfect summer fruit – watermelon!
This isn’t really a martini, since it calls for rum, but I think just about anything mixed up in a cocktail shaker passes as a martini these days. Oh well, tomat-oh / toe-mato. Whatever you call it, just know that this is a rummy, not overly sweet, nice cool cocktail for those remaining hot summer nights.
Yield: 1 cocktail
1/2 cup diced, seedless watermelon, plus a wedge for garnish
Splash of simple syrup
1/2 oz. Watermelon liqueur
2 oz. Bacardi Limon rum
1. Place watermelon pieces into a cocktail shaker.
2. Using the back of spoon, mash the watermelon against the sides.
3. Add syrup, liqueur, rum and ice. shake well.
4. Strain into a large martini glass and garnish with a watermelon wedge.
