Ok, so it’s not quite Spring just yet, but hear me out. I’ve been feeling a little run down lately. The remnant of a cold from before Thanksgiving (!!) just won’t get lost – little cough, super tired, headaches – and I finally went to the doctor today to move this thing along. In the meantime, I’ve been craving healthy fruits and vegetables to boost my energy and my mood. That’s where this “Spring” smoothie comes in.
Layers of citrus, veggies, fruits, leafy greens all whirled up into a giant clean, green smoothie. Kind of like Spring cleaning for your body!
I halved the recipe below and it still made a huge serving. I also substituted a pear for the grapes because I didn’t have any. The result was a little earthy, but also sweet and satisfyingly filling. I also don’t have a Vitamix, so I layered this as directed in my blender and pureed it until I was happy with the smoothness.
This may be my new Monday lunch from now on!
Spring Green Smoothie
1/2 cup water
2 1/2 cups green seedless grapes
1 orange, peeled, halved and seeded
1/2 lemon, peeled and seeded
1/2 cucumber (no larger than 4 oz., peeled if not organic and cut into large chunks
1/2 green apple, seeded
1 cup kale, ribs removed
1 cup romaine lettuce leaves
1 cup fresh flat-leaf parsley leaves
1 cup frozen pineapple or mango chunks
2 cups ice cubes
1. Place all of the ingredients into a blender in the order listed and secure the lid.
2. Blend until desired consistency is reached, stopping to stir if needed.
