Sooooo… it’s been a month since I’ve been around my little piece of the internet. Swamped at work, swamped at home, and just haven’t had the time to invest lately. Sorry for the lapse and I’m hoping summer will be just a little bit calmer around here. I have been in the kitchen though and thought I’d update you on my Goals for 2015.
Here are the recipe cards that I filed away in April:
Crispy Baked Chicken Strips – Operation Dinner Table! I halved the recipe and made for the Misses, who really liked them. They turned out crispy and the coating stays on very nicely (even though my corn flakes were coarsely crushed, not finely crushed, thanks to the Misses not-quite-perfected-crushing skills!).
Shrimp, Mango, and Avocado Spring Rolls – My first time using rice paper wraps! They were not pretty AT ALL. I got better as I went along, but not good enough for public display. Quite yummy though!
Penne with Five Cheeses – Another Operation Dinner Table option for the Misses from the Barefoot Contessa Family Style cookbook. Huge hit with the Misses, even though it had tomato chunks (never goes over well with them) and chopped fresh basil (“what is that green stuff???”) – five different cheeses, what’s not to like?
Sweet Potato and Black Bean Quinoa Bowls – Loved this, loved this, loved this.
Creamy Blueberry Pie – Yummo!
Creamy Half-Hour Macaroni and Cheese – Again, for the Misses, who both liked but complained about the spinach (Miss F complained way more!). They ate it though… I thought it was a little bland, but I didn’t make it for me. 🙂
Crab Linguine with Lemon and Basil – Easy weeknight pasta dish, but a little too oily/buttery for me. Don’t know why I didn’t expect this reading the ingredients, but I just don’t like really oily/greasy pasta. My fault. D really liked though!
Mexican Potato Salad – Should have halved the recipe because it made too much for two of us, but I loved this salad! Sadly, it doesn’t keep as well as leftovers – the yogurt gets a little grainy the next day or two. But perfect for a party where it will all get gobbled up!
Jalapeño-Lime and Ginger Salmon – (From Passover Made Easy: Favorite Triple-Tested Recipes by Leah Schapira and Victoria Dweki) OK. Fairly easy prep, but mostly just taste the lime flavor the most. Good cold the next day atop a salad…
Tuna Tartare from the Barefoot Contessa Family Style cookbook (the recipe in the book only calls for 3/4 lb. of tuna, not 3 3/4 as in the web recipe) – A fresh tuna delivery from Harbour Island prompted this amazing dinner! Nothing beats FRESH tuna. We ate this whole recipe for dinner (serves 6-8 – oops!) and it was delicious. Perfection.
Tuna Tetrazzini – Made for Misses – both loved! Like old-school tuna casserole but with real cheese and vegetables.
Shrimp and Orzo – (From the Miami Herald, but can’t locate the recipe online) Love some orzo and the Misses loved this too! Sun-dried tomato pesto, shrimp, green peas, and carrots – Yum!
Lemon Blueberry Pancakes – Meh. Not my favorite. They just didn’t work out flavor wise, although I love lemon and blueberry things! 😦
