Alright, over halfway through October and I’m here with my September check in. Beginning to get in the fall mood, although the weather is not quite cooperating! 😦 Please, Mother Nature, send me a cool breeze. Just one, and I will be forever grateful…
On to the September recap.
Here’s a quick summary:
Spring Veggie Quinoa – Not sure how healthy this is due to cheese and butter (I may try to eliminate butter next time), but loaded with veggies. Great flavor and absolutely FANTASTIC with a poached egg on top! 🙂
Vegetarian Pho – NO, NO, NO, NO Pho! The broth smelled delicious, but this soup tasted like dirty dish water! Ugh. Sooo awful. Beyond awful. I haven’t tossed an entire meal in ages – nothing could salvage this. NOTHING. Tragic error.
Turkey Meatball and Orzo Soup – Made this for the girls so we could all have soup on the same day. (Didn’t work – see Pho above…) They really liked it, D did too. One out of two is okay for dinner plans, right?
Open-Faced Avocado Sandwich on Chipotle Toast – Really loved this for a quick and pretty healthy dinner! So yummo. Can’t wait to make this again.
Red Lentil Soup with Lemon and Caramelized Onions – I made this one night when D was out b/c he doesn’t like lentils (I don’t know what is wrong with him!). The recipe makes two servings, so I ate for two nights. Quick and easy and very good for you.
Shrimp Caprese Pizza – Two of my favorite things in one meal – I love a good caprese sandwich and I love pizza. Let the lovefest commence! Delish.
Beef and Cheese Noodle Bake – Made this for the girls who both really, really liked it. Might be because I don’t normally cook them meat? D liked it too, but he is a snob, so wouldn’t make a meal of it.
Lentil Chili – Have a bag of red lentils to use up! Really yummy and flavorful! I’ve made vegetarian chili before, but not with lentils. Pleasantly surprised and will make this again!
Pumpkin Bran Muffins – I made a half recipe of these fat-free muffins, but realized during the process that I didn’t have enough corn syrup. As a result, they were not that sweet, but still had good flavor and were moist. Leaving this recipe out to try again the right way!
Portobello Mushroom Lasagna – So decadent, creamy, and cheesy. Anything that calls for four cups of WHOLE milk and a stick and a half of butter has to be delicious right? It was!
Penne with Shrimp and Herbed Cream Sauce – Again with the cream sauce? I did space these last two meals out with some vegetable items just so you don’t think I sit around eating pasta and cream sauce every night… As you can see from the photo, I didn’t have penne so I subbed in rotini pasta. Very yummy pasta!
Key Lime Meltaways – Yummy tart/sweet tiny cookies!
Laughing Cow Chicken – Weeknight dinner for the Misses. They loved it! The recipe uses two chicken breasts, so I split one for the girls and D ate the other. He loved it too. SUPER easy with six ingredients. A definite keeper!
Thirteen cards to file away for a grand total of 119… wishing I were farther along in my quest, but here I am. 🙂
