15 new recipe cards filed away this month.
Grand total of 43 for the year… So far, so good I think, but I have some work to do this month! 🙂
First up was Linguine with Shrimp – this was from Scholastic Magazine (2011) but I made it for D and me, not the Misses. Really easy weeknight meal that helped me use up some mascarpone cheese I had lingering in my refrigerator.
Peach Yogurt Mix-in – The recipe gives the option for a few flavors (blueberry, raspberry), but I chose peach, and this was my breakfast with non-fat vanilla Greek yogurt and granola for a week. I even used frozen peaches, so it was that much easier!
D made Pasta with Mussels in Tomato Sauce for us and it was a nice, mild dinner. I normally don’t like dealing with mussel shells in my pasta, but it was good!
I made a super-easy Balsamic Vinaigrette that was good and basic. Can’t find the recipe online, so that’s that..
Next up was Garlic-Lemon Mahi-Mahi – Good flavor and ingredients that you should already have on hand – super easy.
I served the fish with these Fresh Green Beans with Toasted Almonds. D and I really liked, but the Misses are not quite on board with green beans yet, although I’m not sure why…
Oh yum, Sesame Noodles with Peanut Sauce. I really loved this – creamy peanut butter-soy noodles with crunchy carrots and scallions. Better on the first day than reheated, but I really liked this and had it for a few days!
Another yummy dinner – Black Bean and Butternut Tacos. I didn’t make the recipe for the pickled shallots because I already had pickled radishes in my fridge. These were good tacos. If you use corn tortillas, this would be a great vegan meal!
The biggest hit of the month was Coconut Milk Infused French Toast. With Coconut Buttermilk Syrup no less. I made this as breakfast-for-dinner for the Misses and they loved it so much, they had leftovers for three days. Syrup is amazing.
Dinner for the grown-ups was Lemon-Garlic Orzo Soup with Arugula and Goat Cheese Flatbread. Soup was watery and thin and the flavor just okay. Don’t need to make again…but the flatbread was delicious and we poised the whole thing off. Super easy using this prepared pizza crust:
Excellent side dish – Fire Roasted Mac & Cheese, which is really made with orzo and amazing. Will definitely make again to share!
Next up was Zesty Lemon Shortbread Cookies that were okay, but a little bitter. Might have been the lemons I used, but the cookies were just okay…
Another good side dish – Roasted Parsnips and Carrots. Love parsnips and love roasted veggies!
I gave up sweets for Lent – a real sacrifice but it wasn’t like I gave up alcohol, that would make me a martyr… I planned very specifically for my Easter dessert knowing it would be my first indulgence after abstaining! Barefoot Contessa’s Coconut Cake fit the bill. Great cake!
Finally, I made the girls One-Pan Broccoli-Bacon Mac and Cheese. Four of their favorite things in one dish – cheese, pasta, bacon, and broccoli.
