We had friends over for the Fourth of July for a barbecue, swimming, and firework watching over at the Biltmore. I had to make a summery cocktail and this Cherry-Peach Sangria fit the bill perfectly. Nice variation on sangria with thyme and basil. Must double or triple the recipe next time – it’s that good. I actually have some cherries and peaches in my fridge right now… Yay for my weekend!
I made this Lemony Cucumber Salad as one of my side dishes. Easy to make, but on the bland side. I ended up not saving the leftovers…
For dessert, I made Iced Oatmeal Cookies from this post and Strawberry Cheesecake Pops because they sounded fun and summery. The pops were my favorite – best thing I made that day. Loved the cheesecake and the sweet strawberry swirl.
I also thought I should make something chocolatey for the kiddos, and the recipe for Rich Chocolate Pudding Pie was really simple, so I made that in the morning and let it chill out in the fridge until dinner time. HUGE hit and didn’t have a single bit leftover!
Then it was off to see some fireworks…
I’ve had a recipe for Vegetable Paella hanging around for a reeeaaalllyyy long time. So long that I don’t know where it came from (it looks like it could have been from Glamour or Cosmo magazine?) and can’t find it online. No matter, it was meh. Unfortunately, it made a ton and wasn’t worth the effort.
Sweet Potato, Black Bean, and Goat Cheese Pizza sounded good and interesting. It was both. Really great flavor combination – a little sweetness, creamy goat cheese, crunchy bell peppers…yum!
One of the very few good things about living in South Florida in the summer is the abundance of mangos. Thanks to friends, I had a bounty to use, so I tackled Vanilla Mango Preserves. A-mazing. I heart mangos.
I had a few more mangos lingering around that made their way into Mango and Black Bean Salsa. Healthy, spicy, delicious.
For a quick weeknight dinner, I made Creamy Linguine with Shrimp and Veggies. From Cooking Light, so the creamy part wasn’t that bad for us. This recipe will probably work its way into rotation.
Only nine cards filed away this month. This brings the total to 92 for the year. Not as far along as I hoped, but things were hopping around here this month!
