How are we 1/6 of the way into 2017?  Clearly, I am behind on this year and this blog – I didn’t post at all in February!  Bad K.  I’m going to try to get back on track soon…

My goal for the year, like last year, is filing away 200 recipe cards from this crazy pile.  Almost got there last year, so we try again!  If at first you don’t succeed…

Started off the year in a mediocre way with Okra and Shrimp (Miami Herald adapted from here).  It took for. ever. to find fresh okra here, so when I did finally, I was psyched to make this.  Meh.

Next up was Better-Than-Takeout Sesame Tofu.  Sauce was really good, but I sliced the tofu too thinly, so need to work on the execution next time.  There will be a next time.

I made Chicken Fettuccine Alfredo for the girls and they really liked! Super simple and perfect for a weeknight, school-day dinner.

I made Sesame Soba Noodles and I think this was the first and only recipe from one of my favorite websites that I didn’t like.  I did mess up the soba noodles (yes, it is possible to overcook and undercook soba noodles at the same time…) and I didn’t love the sauce.

For our beloved M’s birthday, I made a half recipe of Perfectly Chocolate Cupcakes with Chocolate Cream Cheese Frosting.  Cupcakes were moist with a nice chocolatey flavor and the frosting was really, really good.  (Picture taken in my fridge – sorry!)

Continuing the just so-so theme of dinner entrees – Pasta with Zucchini, Shrimp, and Saffron.  Good, not great, kind of oily.  Not a fave.

I split this Banana- Mango Smoothie with Miss E.  It tastes like a fruit milkshake – thick and creamy.  Yums.

Redemption dinner – Vegetable Lasagna with Butternut Bechamel!  Kind of a long prep, but I made on a Sunday, so it was okay.  Rich and the butternut squash béchamel was so good!  From Cooking Light, so I didn’t feel too guilty.

I made Lemon-Garlic Chicken (from an old Southern Living, not online) for the Misses, who liked the chicken but I skipped giving them the broth/sauce – it was too tangy/lemony and I knew they would hate it.   The chicken kind of poached in the broth, so it was not dried out at all.

I halved a recipe for Creamy Rice and Squash Casserole (also from an old Southern Living, same recipe here) as a creamy, yummy side dish for a simple fish entree. Easy peasy.

11 new recipes tried.  Not a stellar new recipe month and off to a slowish start – I need to get cracking to hit 200 this year. Thank goodness for that lasagna for bringing some much-needed yumminess to the month!
