Last old post from the backlog as mentioned here

April, April, April…  Not a lot of time in the kitchen this month.  I only made six new things, which is no bueno…

Here’s what I made:

First up was Black Bean and Yellow Rice Salad.  I had higher hopes for this…not bad, but not super.  This got great reviews online, but I didn’t think it was all that five-star…

I made Pea Pappardelle Pasta, which tastes like Spring on a plate full of green peas, snap peas, and pea shoots with some lovely lemon and a shaving of ricotta salata.  So good – really liked.

Next up was Sweet Potato Risotto.  I liked it well enough, but thought it was too sweet.  I’ve made way better risotto before!

Up next was a Moroccan Vegetable Stew with Couscous – a vegan, veggie-full dish that I really enjoyed.  Great spices.  Will definitely make again.

I’ll also make this Broccoli Stir-Fry with Noodles again.  It was so good and is infinitely adaptable – would be great with other veggies, tofu, or shrimp added too.  So yummy!

Ended the month with a sweet note with Banana Pudding Poke Cake.  If you’re not familiar with a poke cake, it is essentially a cake with holes poked into it so that something yummy will seep into the holes.  In this case it was vanilla pudding topped with sliced bananas and whipped cream.  The cake alone was really good, but with everything else, it was delicious!
