I have just the thing – refreshing, fruity ice pops!
These are really easy, not too much sugar and have a tangy-sweet taste that is pretty addictive. I was a little unsure about the addition of vanilla extract, but it works and is just enough to only give a hint of the flavor.
When I made this recipe, it only yielded six pops. And, I omitted the rum because they were for the Misses. 🙂
Passion Fruit Frozen Pops
3 Tbsp. sugar
3 Tbsp. water
1 cup guava nectar or unsweetened pineapple juice
1/2 cup passion fruit juice blend
2 tablespoons lime juice
1 Tbsp. rum (optional)
1/2 tsp. vanilla
1. In a small bowl, combine sugar and the water; stir until sugar is dissolved.
2. Stir in guava nectar or pineapple juice, passion fruit juice blend, lime juice, rum (if using), and vanilla.
3. Divide juice mixture among eight compartments of a freezer pop molds. Freeze for 3 to 4 hours or until firm. Makes 8 freezer pops.
(If you don’t have ice pop molds, you can pour into 3-ounce paper or plastic cups and cover the cups with foil. With a sharp knife, make a slit in each foil “lid” and add sticks or plastic spoons for handles.)
